Soup is simple


At this time of year, there's nothing more comforting than a steaming bowl of homemade soup. So many people think that making soup is either difficult or time consuming - how wrong can you be?

A quick, simple soup is Cream of Broccoli.

I'm not one for measuring ingredients - so just scale this recipe to the amount of soup you want to make. Boil Broccoli in salted water until really soft - much softer than you would normally want to eat it. Drain water, but hold it back. Place Broccoli in blender and add a little of the held back water. Blend and add cream and pepper to taste.

I find that the flavour develops better if the soup is left for an hour or so at this point, but it's not really necessary.

Reheat and eat!


Now try telling me that soup is hard to do!
